It has been many months since the last post. It appears this blog will be taking on a new light as the new year approaches. So many things have changed in my life since the last post. I moved out and am trying to make it on my own. Also the was/still is confusion on what I believe in. With so many changes going on I let many things go to the wayside, this blog and my fitness taking the biggest hits. So from now on this blog will be about my journey where ever it may take me. My successes and failures in my fitness, the music I want to make, and all other manner of things that happen to us all in life.
For now fitness is my focus, and music but that will be another post, and boy have I lost my way. I forced myself to step on to the thing most hated by 90% of females, the scale. That torture device slapped me in the face with the number 177. For my small frame 177 lb. is not a good number at all.
What does one do when slapped in the face? You punch back with as much force as possible. The first day after I went running/walking with a friend to get back on track. Also trying to refocus on starting to do yoga again and consuming more fresh vegetables and legumes and less processed forms of nutrition. The hardest part after trying to get back in the groove of things is to cut down on my alcohol consumption. My friends whiskey and beer will be less frequently seen, unfortunately. Although we used to meet about once or twice a week, it appears that that is still too often according to what my body is saying.
It is not fun to be a chunky vegan. This will change, I will be the healthy vegan with an amazing ass and a great all around fitness level. It is not just a new years resolution but a life resolution. I have the power to achieve all I want to in this life, and it is not fear of failure that should hold me back.
An Orlando based blog from two snarky vegan chicks that share their love of food and how that effects their world.

Born into the Wrong Generation
Hello Rehabbers! Again it has been a while but now we are back. I personally was in a funk that I am still trying to shake. In the meantime exciting things have been going on, case and point: Earth day was last week! For most that means nothing however to us in rehab it is a pretty big deal. We took two days to partake in various festivities! It was glorious.
On the actual date of earth day Nikki and I joined forces for the first day of adventure. First thing on the list: Fill our Bellies! We headed to Drunken Monkey to get lots of delicious food which included vegan pastries, hot dogs, wraps and beverages. Although Drunken Monkey is not a fully vegan establishment they do offer a ton of vegan options and an amazing atmosphere. For me personally it was love at first sight and bite. yum. After we stocked up on edible goods from that lovely establishment it was time to commence with phase two: a picnic in Mead Gardens. With lots of shade and places to explore Mead Gardens is an amazing place in Winter Park. With free admission it makes it even more desirable in my eyes. We sat at some picnic tables and took it all in. Like hippies we played guitar, took in the marvels of nature and hugged trees. I also got attacked by a beetle and we may or may not have gotten lost at one point in time as well. Ah fun times.
On the second day of adventure was even more amazing in its earth day glory. On this day we journeyed to Central Florida Earth Day held on the 23rd of April. This event was held at Lake Eola and was a mash up of art, food, activism and music. There was so much to check out that it was hard to decide where to start.
As always I started off with food munching on a cinnamon sugar doughnut from Babycakes. While eating that morsel from heaven we scoped out the lay of the land. The next stop was at the Orlando Food not Bombs table. By giving a donation to their work you could reap the benefits of your good deeds with a tasty treat. Mine was a PB&J Cuppy. So good and such a great cause.Nikki had already been at the fest for a while so she showed me the way to more amazing things. One of which included some great artist that where some really authentic people. At their table Nikki bought a print and got a bird on her neck done in Henna. I also had the pleasure of hearing a wonderful woman sing. Her name was Kaleigh Baker and I swear she is Janis Joplin in another form. Check her out here.
As we enjoyed our spoils from the Love is Love tent we got one more treat. Another amazing singer, Ms. Dani Shay was brought to our attention. She shared with us her soul and we ate it up with each passing lyric. She was a truly fitting musician to close out our day two of our Earth Day adventures. Reminding us truly that everything we do is interconnected with the world around us.

You Set Your Alarm Clock, I'll Set My Goals
Last time in "Fitness from rehab" we talked about motivation with a specific relation to change. This time I want to talk about goals and their relation to fitness. Goals are what keep you going once you have decided to make that change. One of the reasons why I had never stuck to any fitness goals in the past is that the focus was all wrong. Instead of concentrating on goals that would be felt and met with a sense of achievement, there was a focus on numbers and looks.
This go around the approach is all different. Instead of focusing on a number on a scale, I am striving for miles that can be conquered and boundaries that can be pushed. As part of a way to keep myself accountable here are some my Fitness goals for 2011:
- Run the Baldwin Park Half Marathon- pounding out 13.1 miles to prove my indomitable will
- Be able to do 10 pull ups by the end of the year
- Try something new every month (Stand Up Paddle boarding, Hot Yoga, Etc.)
These are goals that keep pushing you to achieve, and do not leave you at a dead end. So for all those trying to get motivated or stay motivated in the spring; Remember that it is not what you see in your body that counts but what you feel. It is a focus on never settling for a number on the scale, or a clothing size. Rather it is a commitment to pushing your limits and your boundaries so that you will always have an area to improve or something new to try. So get out of your comfort zone and try something that you have always wanted and make goals that are actually fun and empowering to accomplish.

Modern Day Drifter
So last night I decided to have an adventure. It was saturday and I had the night off which I assure you is very rare. Deciding to jump on this opportunity I thought that I would go to check out the Moon Circle happenings at Dandelion Communitea Cafe and try to open myself up to new people and experiences there. After noshing on some delicious chili and one quite delicious beverage, (thank you Orlando Brewing Co.) I ambled outside to the circle. As I gazed at it the most curious sensation came over me. I felt as an outsider looking in, like I was watching what was before me as if they were actors in a movie and I was just the audience. So I did what I do best, I drifted.
The Colonial Mills area of Orlando is one of the most interesting places to wander. You can see people in Vietnamese restaurants creating bonds over different dishes. People shopping for foods in various markets that carry delicacies not found in other places. There are so many things to see and observe. I found myself making my way up the block from Dandy to my favorite Vegan Bakery Raphsodic. It was one of those rare times you happen upon something wonderful.
All I really wanted was a cupcake and maybe some pleasant conversation. I stumbled upon one of my favorite things, after cuppycakes, live music. There were two wonderful gentlemen from Gainesville playing everything from the blues, to hymns and even some bluegrass. It was music that you was tangible in the way it filled the room and your body. It was beautiful, real, and honest. It also drew people in that were a reflection of the music in that aspect.
In addition to listening to that wonderful euphonious marriage of sound and soul, the people I met that evening really made the experience outstanding. They were not afraid to tell someone their story that was a stranger. Although we parted ways still not knowing each others names, it felt as if I had been talking to long lost friends that were imparting the wisdom of their experiences to me.
As I crossed the intersection and headed back to my car I gazed at the moon that was the original purpose of my outing that evening. While I gazed at it's beauty I realized I had an adventure that had showed me more than most of my previous escapades. That is something that I will treasure forever. So to all of you that find yourself with the feelings I mentioned at the beginning of this post, just remember to explore and wander. Sometimes the most wonderful moments in life are stumbled upon. - L

lets get it started
So this morning, as I rolled out of bed cursing the U.S. Government for its meddling with my clock, I had no drive to work out. The only drive I had was to hurl my alarm clock across the room so it would shut up. If you haven't guessed I am so a morning person. However I know that if I do not try to do some sort of physical activity before Noon, I know it will never happen. So I looked at my goal sheet, my rewards sheet and decided that today I would do a strength routine for upper body.
As I did reps of tricep extensions, bicep curls and all other means of movement to give me a goddess like feeling of strength in this region, I started to think about why I pushed myself today. Sure I have kick butt goals and a super awesome rewards system that usually isn't enough for me to say "Whoo HOO Exercise!"
The closest thing I can come up with is a quote by J.F. K.
" There are risks and costs to action . But they are far less than the long range risks of comfortable inaction"
I am tired of not acting upon what I want and the changes I want. I have to take that action to make that change. That accountability, and the awesome playlists I make, motivate me, -L

The Sweet and the Savory
Today it was time to discuss some very important ideas and to just hang out in general. What better way to do that than at the table surrounded by mounds of fruit and delicious vegan sausage crumbles?
The rehabbers were reunited and this time was spent planning for the future around a smorgasbord of French Toast, fruit, and a savory sausage scramble. It was epic. Lauren brought the "sausage" as a surprise! How sweet! Er, savory.
Never having tried it before, I have to say, "Holy garbanzo beans, that was damn good."
Of course, it was tested on the non-vegans of the house. It got a big thumbs up from both members.
So we began, I stuck to the sweet and Lauren to the savory.
May I say we must be cooking gods. Just saying, we must be.
In the end, this was a really great day and meal. We finished it off by painting in the front yard. In the sun. With the outside cat, Max. Best way to digest...lol.
I can only hope for more days like this.
And meals. More meals too.
Vegan French Toast
Stale french bread loaf cut into one inch slices.
Vanilla soymilk (1 cup)
Cinnamon (a couple dashes)
Vanilla Extract (a couple drops)
Cornstarch (2 tbsp)
Flour(1/4 cup)
Soak the bread in the mixture for a few seconds on each side. Like pancakes, place in pan on medium heat until brown on both sides.
Top with powdered sugar, maple syrup, fruit, or in our case, Organic Blueberry Preserves.
Savory Sausage Scramble
Diced potatoes (3 cups when diced)
Chopped carrots (about a cup when chopped, or two whole carrots)onion, chopped
Handful or more of spinach
Three cloves garlic, minced
Vegan sausage
Heat potatoes first in pan until soft.
Add carrots until soft.
Add onion.
Add garlic.
Add sausage, pulling it off in pieces for the crumbly effect.
Add spinach last as it is most delicate.
Spice as desired.
I had mine with a hint of ketchup :]
This truly was a Feast of a brunch. Finish it off with tea if you'd like. we did.- N

No More Squishy!
Skinny. Thin. Insanely gorgeous. These are all attributes that people are futilely trying to achieve thanks to todays media. If you are not one of these things, then society gives the impression that you will never achieve a true sense of happiness with yourself. This is commonplace ideal in western society and its becoming a subtle message in the way many organizations are marketing Veganism. Skinny little things loving various vegetables in very very interesting poses. Sound familiar?
When I first became a vegan almost a year ago I told myself it was for the sake of my health and how living this way made me feel. With a family history of heart disease, diabetes, hypertension and a whole slew of other things that could kill me down the road. Then further down the road I found a commitment to animals that has kept me going. However I was not immune to the images of skinny girls that were committed to this lifestyle as well. I thought that just by eating vegan foods and living the lifestyle would magically make me that beautiful girl that turned heads when I walked in the room. Funny thing is i'm not that girl at all.
I am a squishy vegan. I eat all the "right" foods but somehow I forgot about one important thing: Fitness. I believe that this is something that is not emphasized enough in our community. Much time is spent on food, which I don't have any real objections against, but when looking for a balance with fitness there is not as much emphasis. Its more of a footnote or even side note at best and I feel that needs to change. I don't want to be a squishy vegan, I want to be a healthy vegan in all the aspects of the word.
Number one on the objective to being a healthy vegan is making fitness a bigger and better part of my life. I no longer want to be a vegan who eats an extremely fresh and fulfilling variety of foods and expect that alone to make me look like Natalie Portman or Olivia Wilde. I want to be active and push the limits of what I think I can do. Its taken me almost nine months to develop this outlook. Nine months to realize that there was more to the formula of healthy living then I was believing. Its like I'm having a child of an epiphany, and I do not wish for others to have to wait that long if they have not met this realization.
I think there needs to be a shift from how we show a vegan lifestyle. Instead of showing scantily clad women for the cause, we should try showing real everyday vegans that are making the change. We should be talking more about how fitness plays a role in this lifestyle in addition to helping animals and eating delicious foods. Change always has to start somewhere, and here in rehab at least one post a week will be dedicated to this cause. Now I am warning you that I am in no way a fitness professional, and the only thing I am certified in besides eating is CPR. However, as a person on a journey for constant self-improvement I can share my experiences, triumphs and weaknesses. So today we are starting something to change perspectives, stereotypes and hopefully some lives. Let operation Rehab Fitness begin.

Epic Vegan Adventure
![]() |
| Twinkle Lights and Awesome-ness in Stardust |
So today was an amazing adventure for us in Rehab. We started the day off at Stardust Video and Coffee which is one of the quirkiest places in the Orlando area. Not only was I mystified and in awe of the world I was taken to as I stepped in the door; I was also blown away by the delicious vegan goodies. While observing the beautiful space, there was a whimsical charm increased by a tree and twinkle lights, I also noted the intoxicating smell of fresh baked goods. My feet carried me to the counter where they had offering for all, but I decided on the Haiku Mint Green Tea and a Vegan Blueberry Muffin. My cohort decided to try an amazing vegan strawberry scone and had a cup of Oolong Tea. Regrettably to say that these delicious treats were gobbled up so quickly that only the wrapper was left. Photographic evidence of such will be provided.
Next on the agenda was a trip to the super rad Park Avenue CD's which is soon to become my new favorite hangout. This basically means I wan't to move into the structure permanently. It surrounded me with the sounds of some of my favorite bands and other's that I had not heard of before. Definitely a place worth checking out in the Audubon Park area.
Next on the days agenda was heading to a little shop in the Milk district called Etoile Boutique to check out what was new and talk some art. This little gem is super brilliant showcasing vintage, local and handmade items. Also being sold there are some super cool vegan lip balms and great handmade jewelry. There are usually two little furry friends to greet you if you go on a day that the owner is in. So head on down and you will not be disappointed.
One of the highlights for me is checking out new places that I've never been to before. The first two establishments visited today had been around for a while, but I had never visited them before. The most anticipated stop for today was the newly opened Sandwich Bar. This place blew my taste buds away. They have two sides of the menu, one for those who are omnivores and the other for vegetarians. There is also a section on the bottom marked specifically with vegan options. For starters we ordered the vegan Bruschetta which was the best one I had had to date. Then following that delicious dish I had the healthy butt sandwich which consisted of multigrain bread, in house peanut butter, strawberries, bananas and sweet agave. Sooo Gooodddd. Ah.
After many other stops today we ended up at the one and only Dandelion Communittea Cafe. We stopped in for some Kombucha and a sweet or two. Okay it was two delicious sweets of the vegan variety: a raspberry cuppy with chocolate ganache and a PB&J Blondie. So that ended our epic vegan adventure for the day but I assure you there will be more fun times in this rehabber's future. - L

The Big O and the Dirty V Word
So this past week was a big one in vegan (the Dirty V word) History. Oprah Winfrey (the Big O) decided to have all the staff at Harpo and herself trying to go Vegan for a week. On the show this was chronicled along with a visit to a slaughterhouse. The two guests on the show that were featured were Michael Pollan and the Lovely Kathy Freston. Now I am going to warn you now that I was running errands and did not get to start watching until the slaughterhouse bit, but from that point on it was clearly not the show I thought I was going to be watching.
Now I know that not everything in this world is going to always be presented in a just and concise way, this blog for example is biased but my agenda is not hidden. This episode was something else. Every euphemism and oxymoron possible was being used by Michael Pollan, and whenever Mrs. Freston tried to defend her remarks they belittled her. The redeeming moments that saved face for this lifestyle was the moment they asked how some of the staffers felt and the one man lost 13 pounds and was feeling better than he had felt in a long time. That is truly what being vegan is about, making a compassionate choice that you know will change your life for the better.
Although the episode was not exactly what I expected, it still exposed many people to a different way of living that can cause a positive change. That is all you need to get an even bigger momentum is the curiosity and exposure to make that change happen. Oprah said that she my lean into being vegan which is really better than nothing at all. She even has a vegan started kit that is featured on her website. In addition to all the Oprah Exposure, Veganism was also a clue on Jeopardy this week. So maybe the "V" word wont be so dirty in the near future, except maybe when I throw it in Michael Pollan's face.

my first encounter with Seitan
Hello Rehabbers! So today I had the rare luxury of an evening off from work, which really never happens on a glorious Wednesday. This opportunity was taken advantage of by high tailing it to the Turkey Lake Whole Foods here in O-Town. What is so special about this Whole Foods at this time? It is a time of great exploitation and celebration, it is the Block party. This party consists of bounteous free samples as far as the eye can see. As Grandma treated this bounteous blessing with finesse, a.k.a tried as many free samples as she could, I partook of some of the vegan options.
First on my list of limited samples was a raw apple crisp that made my taste buds have a Jersey Shore-esque dance party in my mouth. This was washed down with some organic apple cider, and man was it delicious. After walking around the store shopping for essentials, and the g-mizzle on a sample rampage, I arrived at the only other vegan options for the evening. The first was a dark chocolate truffle that made my toes curl, and I swear is the answer to world peace. The other was a gazpacho made from tomatoes and peppers and utter deliciousness.
My favorite part of this outing was trying something new. It was the first time I tried Seitan. It was a prepared in a mexican cuisine style with black beans and some yummy peppers and veggies. To complement my selection I piled on some yucca [sooo good!] and platino. All I can say is this is my new favorite from whole foods. It was just the right amount of chewy and spice. Washing it down with a nice ginger pear kombucha left me feeling satisfied and happy to finally try another veg mainstay. All in all it was a great evening, well pre home work at least. Any suggestions on what I should try next or your first encounters with a strange or new vegan food? Please leave all suggestions/ experiences in the comments section and I will definitely use or mention them in the next post. Lots of Rehab Lurve - L

VegFestasticness in O-town
Hello Rehabbers! This past weekend was one of the biggest Vegan events to hit Orlando, VegFest 2010! As my first year going I was amazed at all the vendors and community support. There were some of the local vegan/vegetarian restaurants such as Ethos, Dandelion Communitea Cafe, and the Loving Hut along with Rhapsodic Cooperative Company. There were also places that I had never heard of such as Hoover's Health Market, The Health Nut and many others (and those were just food related).
Other attractions at this cornucopia of vegan-y goodness were multiple pet rescues with dogs that were ready to be adopted. There was also yoga, and messages being dolled out as well. Due to the sheer volume of vendors and different happenings going on around the festival, and the unfortunateness of no camera, I am not able to name everyone and everything. On that note however, I am able to give my perspective on how the experience is for a first timer, and relatively new Vegan.
One of the greatest things I observed was the atmosphere. From the vendors to the partakers everyone looked like they were having a great time. Almost everyone was smiling, with the excepting being those eating and that is in my opinion a huge factor on the smile-o-meter. Heck I was surrounded by food and that's what was making me smile.
Another highlight was the diversity of the event. It was not just one group of people eating one type of food. There was a great many people from various backgrounds munching on some excellent eats. I myself wanted some fresh veggies so I got a wrap, but that was after almost 30 minutes of trying to decide what I wanted. So Much food! This diversity is also seen in the musical acts and artist at the event. Music ranging from a jazzy blues vibe to a laid back feel the music had it going on. As for the artists works they ranged from cute and whimsical to abstract. This diversity in the fest really was the icing on the cuppycake for me and I enjoyed every second I spent there, and I know that next year's will be even better. Now after typing all this goodness with a hefty portion of it being about good eats, I must bid you adieu, and my breakfast bonjour. - L

My Reflection, and it Ain't that Scary Either
Recently I celebrated my first six months of being a vegan and how the time has flown. It seems like just yesterday I was a reluctant vegetarian afraid of giving up my then true love, cheese. However I soon found that this love was just an infatuation, and my real true love Daiya walked in. That was the day that I changed my ways and moved on from my crush.
It seems now, as I look back, that this is pretty much the best thing that has happened to me. New worlds have opened up to me that would not have been possible if I kept up my old lifestyle. I truly enjoy each day more than I ever have before, which is saying a lot coming from the girl with some major issues. It has changed my life in every way for the better and I am so thankful for that. So as I reflect on how going vegan has changed me, I wonder how has it touched other lives? If it has for you, or in someone you know and you feel the need to share please leave a comment and inspire around you. - L

put in the box of shame
Dear Readers,
I am profoundly sorry that I have neglected you in this fashion and I hope to never do so again. All though it is not particularly good, I do have an excuse. The devil that is school has returned, and I am in the midst of an epic battle with said evil. This battle has consumed my time, and detracted from the loveliness that is this blog and all it encompasses. To remedy this I will be trying to get post up at least once a week or more. As I type this apology from my box of shame I hope it is within your lovely hearts to forgive me. - L

Get Your Cook On!
Today we will be looking at what you can cook when you are at home, and either can't afford to go and explore the city or you don't want to. Nikki tested some recipes, and did not invite me to eat them! If you want some ideas for something scrumptious to eat, try these on for size.

Stuffed Zucchini
Ingredients
6 med zucchini - approx 6-8 long and 2 in diameter
2 med or 4-6 plum fresh tomatoes
1/2 lb fresh mushrooms
1 fresh red pepper
1 med to large sweet onion
3 lg garlic cloves, more if you love garlic
olive oil for sautéing
salt & pepper to taste
1 bunch fresh basil
breadcrumbs or matzoh meal or falafel mix (approx 1/2 c)
Directions:
Trim the stem on the zucchinis, but don't cut it all the way off. Carefully cut the zucchinis in half lengthwise, making two boats. Use a paring knife and carefully hollow out the zucs, leaving about 1/4 inch all around sides & bottom. Save the parts you remove. Place the zuc boats in an oiled baking pan or cookie sheet.
Chop all the vegetables, but keep them separate. Heat olive oil in large pot or Dutch oven. Add red pepper, a few minutes later onion, a few minutes later garlic. Simmer slowly so they get soft and onions become translucent, but not browned. Add mushrooms, chopped zucchini innards, a few minutes later tomatoes, chopped basil, salt & pepper. Simmer uncovered about 15 min (you don't want them to get mushy). Taste for seasonings, to see if it needs anything. If there is lots of liquid, strain vegs in a colander, but save the liquid. Mix in some vegan bread crumbs or matzoh farfel just to help hold it all together. Fill all the zucchini boats - there should be enough filling for them to be slightly mounded. Baste with the saved liquid.
Bake at 350 degrees Fahrenheit for 1/2 hour to 45 min, until boats are tender but still holding their shape. Check them during baking - if they're getting too dry or browned, cover with foil until the last few min, and baste a couple of times during baking.
Serves: 12
This is a recipe from Vegweb.

I narrowed it down to 3 zucchs and cut all other ingredients in half as well. This recipe was not only a thumbs up from me, but my fiancee as well (not an easy feat). More outstandingly, my brother, who detests most veggies, decided he would finish his girlfriends' share as well. The only downside to this recipe is the length of time it takes to chop up all of the ingredients. Like, the author of this recipe wrote, "If you have a food processor, you're in luck."
PS. It was also extremely satisfying, which I was worried about, and very filling. I will be making it again.
Pop Tarts! (or Baked Toaster-Like Pastries)
Every time I go grocery shopping with Chris, he grabs an unhealthy processed box of Poptarts, blueberry, and proceeds to finish them off within two days. (And he wonders why he constantly has headaches...) That being said, I felt it my duty to look for a healthier version of the toaster pastry and luckily found it on Veg Web!
Ingredients:
3/4 cup whole wheat flour
1/4 cup whole wheat pastry flour
1/2 cup margarine
1/4 cup water
fruit jam or preserves
Directions:
Preheat oven to 350. Grease a cookie sheet and set aside.
In a bowl, combine the flours (you can use whatever flour you want). Add the margarine and cut into flour with pastry cutter or fork, adding water as needed-- I didn't need the full 1/4 cup.
Divide dough into 4 equal sized balls, and on a floured surface, roll each out one at a time into a rectangle shape. On one half of the rectangle, spread about a tablespoon (or more if you like) of jam, leaving an edge of dough visible.
Fold dough over to cover the jam and use a fork to connect the edges. You might need a little water to get them to hold together, if you use a lot of flour to roll it out.
When all 4 are done, put them on the cookie sheet and bake for 12-18 minutes.
Take them off the cookie sheet and let rest on a cooling rack.
Serves: 4
Preparation time: about 30 minutes
This recipe was insanely easy to make. It was quick and the end result was better than any store bought toaster pastry I've ever had. In fact, as soon as I took them out of the oven, they were gobbled up by me and roomies. My fiancee even ate about have of mine, before I stole it back from him!
PS I did make my own icing with powdered sugar, water, some of the blueberry preserves I used for the inside, and a hint of lemon juice.
Portabella Mushroom Burgers
This is my own recipe from experimenting in the kitchen. Every once in a while, Chris and I are down for some burgers, specifically portabella mushroom burgers. It's usually a big deal, even when we shop. We put the shrooms in the cart and it's Christmas all over again. I made the perfect recipe a long time ago, but unfortunately forgot it. This one is still mouth-watering and satisfies his meat cravings and my mushroom ones.
Two large Portabella mushrooms (stems removed, we fed them to our rats)
1/2 large Onion (white, chopped)
Less than half of Green or Red Bell Pepper, chopped (We just use the insides and the surrounding stem area so we can use the pepper for other recipes)
Splash of Veggie Broth
Olive Oil as needed
Liquid smoke (optional)
Salt and pepper to taste
Toppings: Burger Buns (http://vegweb.com/index.php?topic=15153.0)
Tomato slices
Onion slices
Condiments of choice
Lettuce leaf, we had Kale on ours.
Start off by heating up the olive oil (very small amount) in a pan, medium heat. Throw in your peppers. Let simmer for 3 minutes or until almost soft. Somewhere around this point the oil may cease to exist. This is where the veggie broth comes in handy (cutting out some fat here). Add the onion. Let simmer until transparent. Add liquid smoke to taste, along with salt and pepper.
In the same pan, push the sauteed veggies to the side and set the mushrooms in, with the under-part facing upward. Make sure your sautés aren't getting burnt and that your shrooms aren't either. There is no need to flip them. When the edges soften down, the mushrooms are finished.
Assemble the burger with mushroom still upside-down (it's a perfect place to put those yummy sautes). Add toppings. We had Kale instead of lettuce on ours. (Chris' idea believe it or not!) You can serve it with sides or all by its lonesome. We had it with carrot sticks (Chris' idea too! Where's the Chris I used to know? :])

Starting off With a Bang, the Raphsodic Escapade
So on Our First Official Adventure together in Rehab, Nikki and I headed to a Quirky/Cool Vegan Bakery Called Raphsodic Cooperative Company. This 100% vegan bakery has the most delicious confections in the Universe, or Orlando, which is the center of my universe for the moment. They have everything from vegan brownies that will take you a week to eat, to delectable cupcakes that you cannot get enough of and all sweets in between.

| Some of the Delicious Cupcakes on Display |
What must be noted when one first enters this heavenly bakery; it screams, "I AM AWESOME" in about a million different ways. Some examples of the aforementioned awesomeness include the decor that host a rotating gallery of local artist, to vegan friendly handmade jewelry and other goods. This is all before you even approach the bounteously stocked case of sugary delights. Once the Delights have been approached, you may be overcome with indecision from all of the choices that lay before you. There are gluten-free and raw choices, along with the rest of the vegan fare.
Having converted my grandmother to an addict of this institution, I had previously been to Raphsodic on numerous occasions trying many cupcakes, cookies, biscuits and scones. ON this venture a Blueberry filled Cupcake with strawberry icing. This was a beautiful marriage of two flavors that I highly enjoyed. As this was Nikki's first time we tried some extra delicious goodies. Her experience and words of praise are as follows.
I tried the lemon ginger tea with agave nectar that was homemade (exciting!) and the very unique flavor combination of chocolate and espresso that really kicks around in your mouth and with a sip of tea, it all goes down as a rather orgasmic experience, leaving me thinking, "we're coming back here", but more importantly, I was able to exclaim the goodness of a cupcake that's not only sweet in its flavor but in its ideology as well. Vegan cupcakes are not myth.

Side notes: the art on the walls was gorgeous and definitely adds to the environment. The homemade jams were adorable and probably delicious. They have a fridge stocked with an array of healthy drink alternatives to soda.
Overall, the small, but dynamic bakery ties you into the local community. A small bulletin board offers an insight into charities that are being helped around the area and elsewhere, like Food Not Bombs Orlando. Moreover, the flow of the people who are in the space is nothing but good energy. From the co-owner Katie Mosher, who was in during the time of our visit, to the customers coming in, everyone is happy and helpful. (How could you be upset about cupcakes?) No one is shunned for not being veg, there isn't that pungent smell of pretentiousness, and everyone wants to have a good time.
Really, the best way to describe this amazing bakery is as follows:

From those in Rehab
There are two writers of this blog, Lauren and myself, Nikki. We are both vegans and both enjoy discovering new recipes, new places to eat out, and new products that help us live a better vegan lifestyle. We have many reasons for being vegans that include animal well-being and respect, environmental, economical, political, and most important to me: health reasons.
Follow Lauren's appetite chain, for all things comforting and sweet and me for anything a little more on the light side. We will also both be experimenting in different recipes. A good half of the recipes I use are for my fiancee and his own taste buds. These recipes will not be on the light side. As far as eating out goes, we will always go together.
However, we are fairly new vegans. I've been a vegetarian for two years and a vegan on and off for about 5 months. Hopefully, this can be helpful to others just starting out as we chart our progress and the adventures that take place throughout this rehab.
Oh, and a little bit about me, other what's already been stated, I'm aiming towards having a tattoo apprenticeship and working on getting my art displayed in some of the local places in Orlando. I love animals, obviously, especially cats, and you'll probably be seeing a lot of pictures of me with my Vinny-cat at least lingering about in the background.

Welcome to our blog, step inside step inside
'Ello 'Ello 'Ello. Welcome to a Rehab unlike any other. One where you cleanse your body of all nasty, stanky, rotting flesh that we all have affectionately euphemized as "Meat". Yes in case you have not caught on by now, the writers of this blog are Vegan. Oh such a dirty word it seems, but it doesn't have to be. Most people think that Vegans are some of the most depraved people in the world, and that we pretty much do not eat anything. Well step aside haters whilst I munch on my vegan cupcakes, cobblers and all the other veganlicious food that I constantly eat. Yes, I said cupcakes. Oh and I also said cobblers and constantly eat.
The point of this blog is to rave about all the delicious foods that we are discovering in this rehab. Myself and another cowriter, want to bring all things vegan from around the Orlando area, to show that this really is the most kick arse rehab there is. So for now I must bid you adieu, and go dream of those vegan cupcakes.
- Lauren
